Bell Estar i Baix

Savinat is sourced from two different plots belonging to the vineyards of two different winegrowers in the Penedès region:

Bell Estar
     •   1,38 ha
      •   Planted in 2004
      •   Double cordon pruning
      •   Southeast orientation

Baix
      •   3,03 ha
      •   Planted in 2007
      •   Double cordon pruning
      •   North orientation

After years of studying Sauvignon Blanc in its places of origin — including the Loire and New Zealand — and after much searching, we discovered the perfect plots for growing this variety in the Penedès region. As a result, we produce a very distinctive wine: one with an Old World soul but the ability to surprise that is so characteristic of New World wines.

 

Production

Grapes are collected in 25-kg crates, and then the clusters pass over the sorting table. A gentle direct pressing of the whole grapes is carried out, without skin maceration. The must is decanted for half a day and, once clean, ferments in 300-litre barrels of fine-grained, lightly toasted French oak (1/3 new, 1/3 one year old, 1/3 two years old). Finally, regular bâtonnage is carried out to ensure that the lees are in suspension to bring balance to the wine.
